The strains of ''My Old Kentucky Home'' and the accompanying goosebumps. The southern hospitality. The distinct taste of a mint julep. The thunder of hooves down the stretch as the world's best 3-year-old athletes run toward a garland of roses.

The Kentucky Derby is not the best event on horse racing's calendar. It's an over-crowded test of thoroughbreds who generally have not been raced enough to know which, if any, might beat the odds to become the next Secretariat or Seattle Slew.

But there's a reason fans from all over flock on the first Saturday in May to stately Churchill Downs in Louisville, Ky., for what has been called ''the most exciting two minutes in sports.'' When it comes to glamour, the Derby is one-of-a-kind.

From fancy hats and celebrity sightings in the clubhouse to the hardcore handicappers scouring their notes in the grandstand to the college fraternity-style mayhem in the infield, Derby Day offers something for everyone.

To Kentuckyans and anyone who has experienced Derby day, the first Saturday in May brings not just another sporting event. It brings the sporting event.

EAT DRINK AND BE MERRY



Mint Julep Recipe   
1 cup sugar
1 cup water
1 cup mint leaves
Crushed ice
100 proof Kentucky bourbon
Fresh mint sprigs

In a saucepan, combine sugar and water; bring to a boil. Cover and cook, without stirring, for 5 minutes. Remove from heat and allow to cool. In a bowl, bruise mint with the back of a wooden spoon. Place mint in a jar, add sugar syrup, cover and chill in refrigerator for 12 to 24 hours. When ready to use, strain mixture and discard mint. To serve, fill frosted silver mint julep cups or old-fashioned glasses with crushed ice. Add 1 tablespoon syrup and 1 ounce bourbon for each serving. Stir, garnish with a mint sprig. Makes 21 servings.

Run For The Roses Pie   
1 cup sugar
½ cup flour
½ cup melted butter
2 slightly beaten eggs
¾ cup chopped pecans
6 ounces semi sweet chocolate chips
1 teaspoon vanilla extract
2 tablespoons bourbon
1 unbaked 9-inch pie shell

Combine sugar and flour in a mixing bowl; mix in butter. Add eggs, nuts, chocolate chips, vanilla and bourbon; mix well. Pour into pie shell. Place on a baking sheet and bake in preheated, 325-degree oven for 55 minutes until top is golden brown. Serves 8.



Colonel Williams Kentucky Burgoo   
1 pound beef bones
1 pound lean beef chuck (cubed)
1 pound skinless chicken breast (sliced)
1 pound Jimmy Dean hot sausage (crumbled)
8 ounces lean lamb (cubed)
2 quarts beef stock
1 large potato (diced)
1 large yellow onion (diced)
2 green peppers (diced)
4 celery stalks (diced)
4 carrots (peeled and diced)
1 cup frozen corn
1 cup frozen lima beans
3 tablespoons brown sugar
1 tablespoon salt
1 teaspoon cayenne pepper
½ teaspoon black pepper
6 tomatoes (peeled, seeded and diced)
2 cloves of garlic (minced)
1 cup frozen okra
1 can of beer
2 shots of bourbon

Brown meat and beef bones in large pot, add beef stock and bring to a boil. Reduce heat, cover and simmer for one hour.
Add potato, onion, green peppers, celery, carrots, corn and lima beans. Add brown sugar, salt, cayenne and black pepper; simmer for 30 minutes. Add tomatoes, garlic and okra, simmer for 30 minutes. Remove beef bones and add beer and bourbon; bring to a boil. Reduce heat and simmer for one half hour uncovered. Serves 12
For a bolder taste, refrigerate for a day and reheat for serving. And for a real down-home flavor grill the meat to medium before adding to the beef stock.
